If you want to know more about the Macallan 40 Years Old, we’ll tell you that it is aged in oak casts made out of wood from Northern Spain. The wood is shipped south after it spends some time drying in the open air, and it is shaped into casks and toasted over an open fire in the cooperages of Jerez. The casks are then filled with dry Oloroso sherry, and they are left to season for up to two years. In the end, they are emptied and shipped to Macallan’s distillery in Speyside, which means that creating a final cask can take as many as 6 years.
